Pumpkin Cookies
From my Auntie Janice!
Preheat oven to 350 degrees.
Cream together:
2 and 2/3 cups sugar
2/3 cups shortening ( Crisco in a can)
Stir in:
4 beaten eggs
1 small can solid Pumpkin
2/3 cups water
Add:
3 and 1/3 cup flour
1/2 teaspoon baking powder
2 teaspoons soda
1 and 1/2 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon cloves
(Optional: raisins, or dates, or walnuts or pecans) I used 1 whole
box of golden raisins and they were good.
Drop by the spoon full onto baking sheet sprayed with Pam.
(I used a small ice-cream scoop)
Bake on 350 degrees for approximately 10 minutes.
