Banana-Nut Muffins

Southern Living Version
1 3/4 cups all purpose flour
2 1/2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup sugar
1 large egg lightly beaten
1 cup mashed banana
1/2 cup milk
1/3 cup oil
1/2 cup chopped pecans
In one bowl mix the dry ingredients
in another, whisk together the wet ingredients, including the banana.
Add wet ingredients to dry, stirring until moistened. Stir in pecans. Spoon batter into muffin cups
fill 3/4 full.
Bake at 400 degrees for 18-20 mins. or until golden. Remove from pans immediately.
