Garlic Mashed Potatoes


6 medium potatoes, peeled and quartered

4 to 5 garlic cloves

5 cups water

2 tablespoons olive oil or vegetable oil

1/2 to 1 teaspoon salt

Pinch pepper


In a medium saucepan, bring potatoes, garlic and water to a boil.
Reduce heat; cover and cook for 20 minutes or until potatoes are
tender. Drain, reserving 2/3 cup cooking liquid. Mash the
