Chicken Enchillada Skillet Recipe

This one is from my brother. Sounds good, folks!

1 T oil
1 lb boneless skinless chicken breasts, cut into bitesize pieces
1 can (14 1/2 oz) chicken broth
1/4 cup Ranch Dressing
2 T flour
6 Flour Tortillas, cut into small pieces
1 cup Mexican style shredded cheese
Salsa
Sour Cream

Heat oil in large deep skillet on medium-high heat. Add chicken, cook 7 minutes or until cooked through, stirring occasionally.Mix broth, dressing and flour until will blended; gradually add to skillet, stirring constantly. Add tortillas, stir to combine. Bring to boil. Reduce heat to medium-low; simmer for 3 minutes.Sprinkle with cheese; cover. Simmer 3-5 minutes or until cheese is melted. Top with salsa and sour cream.

Marinated London Broil

Interesting using the coke and teriyki together. I might try this one next week.

1 - 12oz can coke
1 - 10oz bottle Teriyaki sauce
1 - 2 1/2-3lb London broil

(1) Combine coke & Teriyaki sauce in a shallow dish or large zip lock freezer bag.
(2) Cover or seal & chill for 24 hours (turning occasionally).
(3) Remove meat from marinade & discard marinade.
(4) Grill covered with grill lid over medium heat (300-350) degrees for 12-15 mins on each side.
(5) Let stand 10 mins. Cut diagonally into thin slices across the grain.

Hash Brown Potato Bake

I love any hash brown casserole and this sounds great.

1 can (10 3/4 ounces) condensed cream of mushroom soup
1 can (10 3/4 ounces) condensed cream of chicken soup
1 container (8 ounces) sour cream
1/2 cup milk
1/4 teaspoon pepper
1 bag (30 ounces) frozen shredded hash brown potatoes, partially thawed
8 medium green onions, sliced (1/2 cup)
1 cup shredded Cheddar cheese (4 ounces)


Heat oven to 350ºF. Grease bottom and side of rectangular baking dish, 13x9x2 inches, with shortening.
In very large bowl, mix soups, sour cream, milk and pepper. Stir in potatoes and onions. Spoon into baking dish.
Bake uncovered 30 minutes. Sprinkle with cheese. Bake 15 to 20 minutes longer or until golden brown on top and bubbly around edges.

Broccoli Salad

This is from my Aunt Janice!

Broccoli Salad

1 bunch broccoli, chopped
1 head cauliflower, chopped
1 cup chopped carrots
1 cup chopped onion (sweet or red)
1 cup golden raisins
1 cup chopped pecans

Italian dressing is good on this salad.
Italian Vinaigrette is good on this salad.
Greek Vinaigrette is good on this salad

Crunchy Ranch Chicken

This is a weight watchers recipe that someone sent in the recipe swap. This sounds great. I definitely intend on trying this.

Ingredients
1/3 C. crushed corn flakes crumbled 1/4 c. parmesan cheese (crumbs in the refrigerated can) 1 pkg. ranch dressing 4 chicken breasts
Instructions
Preheat to 350- in 9x13 pan combine mix- spray chicken w/ pam and roll in crumbs Bake 25-35 minutes. Quick and easy, but the flavor will blow your socks off! Serve with your favorite steamed veggie and your set :)

Death By Chocolate

I love the name of this recipe. Isn't it great?

One large Sara Lee Pound Cake
One large cook and serve chocolate pudding
One large Cool Whip or whipped cream
Six Heath Candy Bars

Break the pound cake up into small pieces and place in the bottom of a lasagna size dish. Prepare chocolate pudding and pour all over the pound cake. Chill until set.
"Frost" with Cool Whip and cover the entire cake/pudding mixture. Pound the Heath bars until they are broken up into pieces....sprinkle over the Cool Whip. Refrigerate....and serve cold. Mmmmm

Layered Pumpkin Dessert

My Aunt Janice sent this to me. It sounds different and delicious!

LAYERED PUMPKIN DESSERT

1 package (15 oz) Hostess Twinkies (10 Twinkies)
1 package (8 oz) cream cheese, softened
1 cup confectioners' sugar
1 container (8 Oz) frozen nondairy whipped topping, thawed, divided
2 packages (3.4 oz each) instant vanilla pudding
1 can (15 oz) pumpkin
1 1/2 teaspoons pumpkin pie spice
1 cup milk
Additonal pumpkin pie spice

Slice Twinkies in half lengthwise and place cream-side up, in single layer in 9X13-inch baking dish. Using a mixer, blend together cream cheese, confectiioners' sugar and 1/2 of whipped topping until smoth. Spread evenly over Twinkies.

Combine pudding mix, pumpkin, pumpkin pie spice and milk. Whish until well blended and layer over cream cheese mixture. Carefully spread remaining whipped topping over pumpkin. Lightly sprinkle with pumpkin pie spice. Refrigerate several hours or until set.

Makes 9 to 12 serviings.

Banana Pudding

This recipe for banana pudding came from someone that participated in the email recipe swap.


8 oz sour cream
1 (8 oz) cool whip, thawed
1 (5 oz) Jello instant vanilla pudding mix
2 cups whole milk
1 (16 oz) package vanilla wafers
4 bananas

In large bowl combine sour cream, cool whip, Jello mix, and milk. Stir well.
In the bottom of trifle bowl or other glass serving dish, put a layer of cookies, then a layer of pudding mixture, then a layer of bananas. Repeat until all ingredients are used. Refrigerate until serving. (Better if made a day ahead).
Lowfat ingredients are also good too.

Pecan Pie Muffins

This recipe came in an email to me from someone that is participating in an email recipe swap. Make note of where it says that Pam cooking spray will not work with this.

1 cup chopped pecans
1 cup firmly packed light brown sugar
1/2 cup all-purpose flour
2 large eggs
1/2 cup butter, melted

Combine pecans, brown sugar & flour in a large bowl. Make a well in the center of mixture. Beat eggs until foamy. Stir eggs and butter. Add to dry ingredients. Stir until moistened. Bake at 350 degrees for 20 - 25 minutes for 12 muffins.

You can either line your muffin pan with cupcake liners, or use Joy baking spray (Pam will not work). When muffins are done, remove from pan and cool.

This is a wonderful recipe for the holidays, it is so easy and so yummy!!

Chocolate Eclaire Cake

Ok, I don't have a formal recipe for this, but here's how I make it:

One box of Honey Maid Graham Crackers
One large box of French Vanilla Instant Pudding
One large container of Cool Whip
One container of milk chocolate frosting

Prepare pudding according to the directions on the box.

Mix the pudding and 3/4 container of cool whip

Begin to layer the graham crackers and pudding mix in a 9X13 pan until the mixture is gone. The top layer should be graham crackers.

Set in the fridge for one hour for the graham crackers to settle. After they have settled, frost the top with chocolate frosting. ENJOY!

Easy Key Lime Pie

This recipe and the three below, came from the ladies conference.

1 large Cool Whip (thawed)
1 small frozen can of Limeade
1 can Eagle Brand Milk

Mix and pour into graham cracker crust. Add a twist of lime for decoration in the middle of the pie.

Sour Cream Cornbread

This sounds so good. I'm going to do this for our next ladies dinner, I think.

1 Box Jiffy Corn Bread Mix
1 egg
1 8oz Sour Cream
1 Stick butter (melted)

Mix together and grease pan (9X9) with Pam
Bake at 350 for 30-40 minutes

Chicken Delight

4-5 Chicken Breasts (Boiled and cut up)
8 oz Sour Cream
1 Can Cream of Celery Soup
3-4 Dashes Soy Sauce
1 Stick Butter (melted)
1 Sleeve of Ritz Crackers

Layer in pan:
1-chicken
2-Mix sour cream, soup, and soy sauce. Smooth over chicken.
3-Top with crumbled crackers and butter

Bake at 350 for 20-30 minutes

Not Your Mama's Banana Pudding/Grown-Up's Version for Turtle Candy

My Aunt Janice sent me these recipes and I thought they looked good.

Not Your Mama's Banana Pudding

Oreo cookies, crumbled
bananas, sliced
chocolate in container you can pour from
whipping cream in baker's bag to squirt out

Cover bottom of bowl with crumbled oreo cookies. Put some
sliced bananas on top of crumbled oreo cookies. Squirt some
streams of chocolate over top of bananas. Add the whipping
cream on top - shapped like flowerettes. Add another layer of
crumbled oreo cookies. Add another layer of sliced bananas.
Squirt some chocolate over bananas. Cover with whipping
cream - shapped like flowerettes. Serve

Grown-Up's Version For Turtles Candy

Floured Tortillas
Melted Caramel
Melted Chocolate
Chopped Nuts


Stack Floured Tortillas and cut in half. Now Cut in half again. Cut
those pieces in half. Put in oven on 350 degrees and let cook
for about 8 minutes to get crispy. Put some melted caramel on
and spread it all over. Next, put on some melted chocolate and
spread it over the caramel. Add some chopped nuts. Serve
